Greek Pasta Salad

Ingredients:

  • Farfalle pasta
  • 1 cup baby spinach
  • 2/3 cup Kalamata olives
  • 1 small cucumber, roughly chopped
  • ¼ cup red onion, finely chopped
  • 1 cup cherry tomatoes, halved
  • 1 yellow capsicum, chopped
  • 2 tablespoons fresh parsley, chopped
  • Feta cheese
For the dressing:
  • 245g Natural Epigamia Greek yogurt
  • 3 tablespoons red wine vinegar
  • 1 clove garlic, chopped
  • 1 teaspoon lemon juice
  • ¼ teaspoon salt
  • ¼ teaspoon black pepper
  • 2 tablespoons olive oil
  • Crushed red pepper
Preparation
  1. Blanch the pasta.
  2. For the dressing: combine Greek yogurt, red wine vinegar, chopped garlic, lemon juice, salt,black pepper, olive oil and crushed red pepper.
  3. In another bowl, combine pasta with baby spinach, cherry tomatoes, olives, cucumber, red capsicum, red chili and feta cheese.
  4. Top with the dressing and a squeeze of lemon.
